Mount Vernon Farmer’s Market Vendor Spotlight ~ Knead More Bread

MOUNT VERNON – If eating healthier foods is your goal the Mount Vernon Farmers Market is the place to go on Saturday mornings from 9 a.m. to noon on the Public Square. Locally grown vegetables such as tomatoes, cucumbers, peppers, zucchini, and potatoes are readily available.
In addition, cottage foods, which are made in home kitchens, are available as well. Aubree Parson bakes delicious sourdough bread in several varieties. She has named her bread business Knead More Bread.
This is Aubree’s second year at the market. She sells cinnamon swirl, oat, wheat, and traditional white varieties of sourdough bread. You’ll also find sourdough crisps which are like crackers. She will soon be roasting Honduran and Ethiopian coffee beans and bringing them to the market to sell.
Aubree uses a 50-year-old starter to make the bread. The starter is a liquid-water combination that she got from her sister-in-law. That combination has a probiotic yeast that is continually fed which makes it live bacteria. That starter is kept refrigerated and Aubree feeds it flour and water each week. Bacteria eats the sugar content and changes the chemical makeup of the flour. It ferments eight to 12 hours at room temperature. When the bread is baked the gluten content is changed and it becomes easier to digest than other types of bread and is good for your gut.
According to medicalnewstoday.com sourdough bread has higher levels of vitamins, minerals, and antioxidants than other breads. It also allows your body to absorb the nutrients more easily than those in regular bread.
